standar Sequence of service di restoran ( english )



SEQUENCE OF SERVICE AT RESTAURANT

1. WELCOMING THE GUEST
            - Greet the guest within 5 second of arrival
            - Greet the guest with “ Panganjali “, mention guest name, smile, eye contact.
            - Say “ Om swastyastu, Selamat pagi Mr/Mrs….”
2. ESCORTING THE GUEST
            - Check the reservation table if any
3. CHOICE OF SEATING
            - Make sure that table clean, completed with table set up
            - Say “would you like a table for….”
4. CHAIR ASSISTANCE
            - Give the chair for ladies first
5. FOLDING THE GUEST NAPKIN
            - Excuse to the guest
            - Fold the napkin with triangle side

 
6. ITRODUCE YOUR SELF
            - It is very important to introduce your self to get the compliment or complain
            - “Good Morning My name is…….to be your waiter this morning”
7. PRESENTING DRINK LIST AND MENU
            - Menu should be open
            - Offering with ladies first
            - Tell about your special menu today
            - Tell the guest for not available item on menu ( if any )
            - Make sure the menu still in good condition before you give the guest
8. TAKING BEVERAGE ORDER
            - Take beverage order from ladies first
            - Use “ selling technique “
            - “Would you like me to open a bottle of wine for accompaniment ypur meal Mr/Mrs..?”
            - Don’t forget to repeat the beverage order
            - Leave the guest to prepare the beverage
9. POURING ICE WATER
            - Make sure the ice water is cold and fresh
            - Pouring ice water ladies first
            - Serve cold/warm face towel
10. SERVE BEVERAGE ORDER
            - Serve beverage order quickly
            - Serve ladies first
            - Before serving check order correctly
            - Make sure the glass or bottle in good condition
            - If beverage with bottle pour the beverage and put the bottle in front of glass
11. TAKING THE FOOD ORDER
            - Ladies first
            -Write down the order from appetizer, soup main course
            -Use up selling technique
-‘’What would you like for your first course we have very delicious………..for your      
   Starter’’
-Write the order clearly
-Don’t forget to repeat the order
12. SERVE BREAD AND BUTTER
 - Check the bread still fresh
13. ADJUSMENT CUTTLERIES
- Adjust the cutleries need it
-While we change the cutleries, should we check the overall table set up if there is any thing has to refill or we can offer to the guest.
14. SERVING THE FOOD (APPETIZER, SOUPOR MAIN COURSE )
-Before serve check the presentation of the food is correct, completed with food condiment
-Serve the food from the right hand side of the guest (clockwise)
-From ladies first
-Mention name of the Food ‘’This is your name……Mr/Ms…..’’
-Ask the guest if anything else say ‘’ Anithing else I can do for you ‘’
Enjoyable the guest having meal ‘’ Have a nice dinner or….
15. CHECKING GUEST SATISFACTION
            -We can do when the guest having their meal or finish they meal
            -Say  ‘’How was your meal….Mr/Mrs…”
16. CLEAR UP THE SOILD DISHES
            -Please wait until all guest finish
            -Clear up from the right side
            -After finish clear up, Serve cold/warm face towel
17.CRUMBING DOWN
            -With clean towel/cloth
                        -Always excuse when we going interrupt the guest
                        -Clear equipment if not necessary / except ashtray
            18. OFFERING DESSERT
                        -Menu should be open with dessertselection
                        -Promote your dessert special
            19. ADJUSTING CUTLERIES FOR DESSERT
                        -Re set up cutlery before you serve for next food
            20. SERVING DESSERT
                        -Ladies first
                        -Mention the food name
                        -Check the presentation of food before serve
            21. SERVE COFFEE OR TEA
                        -Ask the guest if they want to have coffee or tea with the food
            22. PRESENTING THE  BILL
                        -Complete the bill with guest name, room no ( if any )
                        -Check the amount of bill correctly
            23. FAREWELL THE GUEST
                        -Say thank you for coming
                        -ALWAYS SMILE
